A wonderful Sunday

We went over to our neighbors, the Nordstrands, for lunch and cookie baking.  Berit and Arnfinn live right around the corner from us, and their youngest daughter Mathea is in the same class with Grace.  They have a family of six children and they are both medical doctors.  (I am greatly in awe of Berit's organization and efficiency.)  We had an awesome meal of grøt, flatbread, and spekemat (cured meats), followed by cookies and rhubarb pie.

In Norway, it is traditional to bake seven different types of cookies at Christmas time.  As Berit said, if you don't bake all seven, it isn't Christmas.  Today, she baked colakake (caramel cookies) and oh my goodness, were they good.  Though there is little butter to come by in the stores in Norway, Berit just made her own by mixing double cream in her mixer for 5 minutes.  Voila!
